Ground Cauliflower Taco Meat

A couple months ago, we were out to lunch with my parents. I couldn’t decide what I wanted to eat, and was curious about the Ground Cauliflower Tacos that were on the menu. They looked like normal tacos, but instead of ground beef, the cauliflower had been spiced and cooked to similar texture and taste of meat. 

A while later, I started looking at how to replicate this ground cauliflower taco meat meal myself because we love tacos and would love to try something different. The biggest thing was making sure to properly replicate the texture of taco meat.

Ground Cauliflower Tacos with Rice and Beans So the other weekend, we tried these out and they were a hit. Many people consider me to be a picky eater, but a lot of my issues with different foods are because of their texture. Ironically, two of the main ingredients in this recipe are foods that I won’t normally eat, but because the texture changes, it was actually quite tasty. 

This recipe made a good amount of ground cauliflower meat, so in addition to the tacos, Brad and I have also used it for nachos (with different spices, the same method would also work for spaghetti with meat sauce). 

Ground Cauliflower "meat" from the oven One of my favorite toppings for these ground cauliflower tacos was some homemade pickled onions. I originally made some pickled onions to go with pulled pork sandwiches over the holidays, and have kept these pickles in the fridge (in their pickling liquid) and have used them to top sandwiches and tacos. 

Ground Cauliflower Tacos with Rice and Beans As I mentioned previously, Brad and I enjoy tacos and nachos for dinner. At one point, I even made a menu board where the background states “there’s always nachos” because it was a standard go-to if I didn’t have an idea of what to make for dinner. 

I love topping our tacos or nachos with fresh ingredients such as cilantro, pico, and avocado.

Ground Cauliflower Tacos

Replace ground beef in your tacos with this delicious ground cauliflower option. A delicious meal perfect for weeknight or weekend dinners.

Cook Time 50 minutes
Additional Time 15 minutes
Total Time 1 hour 20 minutes

Ingredients

  • 1 Head of Cauliflower
  • 8 ounces White Mushrooms
  • 3/4 cup Walnuts
  • 1/4 cup Soy Sauce
  • 2 Tablespoon minced garlic
  • 2 Tablespoon Chili Powder
  • 1 Tablespoon Onion Salt
  • 2 teaspoons ground Cumin
  • 2 teaspoons ground Turmeric

Instructions

  1. Preheat oven to 350*
  2. Remove the stems and leaves from the cauliflower, chop into small pieces
  3. In a food processor or high powered blender, pulse the mushrooms into rice sized pieces. Move the mushrooms into a mixing bowl.
  4. Repeat with the walnuts and cauliflower, placing into the same mixing bowl after they are blended.
  5. Stir in the soy sauce and spices.
  6. Add a Slipat or parchment paper to a baking sheet
  7. Evenly spread the mixture on the baking sheet.
  8. Bake for 30 minutes, stir, then continue baking for additional 15-20 minutes, stirring every 5 minutes.
  9. The ground cauliflower is done when it is a consistent color when stirred.
  10. Use the ground cauliflower to make delicious tacos with your favorite toppings!

Notes

Delicious toppings include lettuce, salsa, avocado, cheese, pickled onions, or whatever else you enjoy!
